This is because when minerals occur in the right balance, plants convert amino acids and simple sugars into complex starches and proteins needed for growth, on the other hand plants that are not grown in the correct balance of minerals contain more simple amino acids and sugars. Insect pests are attracted to these sugars and so will prefer these to organically grown crops. And so mineral deficiency illness is also a big problem of the 20th century. The old saying “an apple a day will keep the doctor away” is no longer true as it would take many apples to give us the same nutrients as one apple would have over 100 years ago. Unfortunately most of us don’t have the time or space to grow our own organic fruit and vegetables or cannot afford to buy them, as quite expensive. But if we could, for one, correct the problem of mineral deficiency in our diets, we would all be a much healthier generation of people.
