A proper diet is a good basis for good health because as stated before so many diseases are related to vitamin/mineral deficiency. A diet filled with a variety of fruit and vegetables, (preferably raw or lightly steamed) will provide the body with a rich supply of antioxidants which are extremely important in disease prevention. Antioxidants prevent what is known as free radical damage to our body cells and so preventing serious diseases such as cancer. So we need to have a proper balance of vital nutrients in our body to keep our immune system functioning properly to provide protection from these infections and diseases


Alpha-, Beta-, and Gamma-Carotenes.
How do they help us?

They neutralize carcinogens, protect against ultraviolet light, and build vitamin A. Heat won't destroy most carotenes, although it will convert them into a form that is slightly more difficult for the body to absorb.
Carrots, peaches, pumpkin, winter squash, watermelon.

These white or yellow pigments assist in the absorption of vitamin C (another potent antioxidant), stimulate the immune system, and strengthen collagen, the cells that maintain the structure and plumpness of skin.
Examples: Grapefruit, lemon, buckwheat


Lutein and zeaxanthin.

These pigments — also found in the macula of the human eye — protect against UV damage. A diet high in these nutrients may help prevent age-related macular degeneration, the leading cause of blindness in American adults. These substances are also associated with a lower risk of breast cancer.
Examples: Lettuce, green capsicum, cucumber, broccoli and cabbage

These sulfur-based compounds are believed to reduce the risk of several cancers, including those of the lung, colon, stomach, and rectum.

Consuming a lycopene-rich diet can stave off heart attacks by as much as 50 percent. Lycopene may also help prevent cervical and prostate cancers.
Examples: Tomatoes (the richest source), pink grapefruit, watermelon.

These compounds boost immunity, fight many cancers (including stomach cancer), and protect against ulcers and heart disease.
Examples: Garlic, onions, leeks, chives, Cabbage, brussel sprouts, other cruciferous vegetables.
